Busyness and sleepless night are still the norms in this household, but I’ve become a master at coming up with quick and filling food for different situations in everyday life. This grainless raw porridge was inspired the morning that I realized I had forgotten to put the oat meal to soak the previous night and I needed to get some food into me fast. This raw porridge full of berries is soft and easily spoonable. The porridge was so quick to prepare that in the end I even had time to decorate the portion and take a few pictures too.
I couldn’t resist hiding into the porridge the two last sticks of cellery I had in the fridge. It might sound a bit odd, but I think that vegetables fit well into a smoothie (not to mention it’s a good way to increase your vegetable intake…), so why not put some in a raw berry porridge. The cellery actually adds a fresh taste to the porridge, but I bet that if one didn’t know that the porridge contains cellery one wouldn’t even taste it.
I enjoyed this porridge with a cardamom spiced coconut cream coffee, and suddenly the morning didn’t seem as gray as did before breakfast!
Grain-free Raw Porridge with Berries
2 servings
4 Tbsp chia seeds
2 heaped Tbsp of hemp protein
2 Tbsp lucuma powder
ca. 4 dl black currants
1 banana
2 cellery stalks
ca. 2 dl coconut milk
ca. 2 dl almond milk
water (add until consistency is to your liking)
Decoration: berries, banana, coconut flakes
Pour the chia seeds and the coconut and almond milks into the blender. Add then the other ingredients and blend until smooth. Add water until the consistency is to your liking. Decorate if you have time!
And there you have your super quick breakfast porridge ready to go!
