Lovely Cashew Hot Chocolate with Cashew Cream

This sweet and soft cashew hot chocolate is simply dreamy! It’s warming, lovely, easy to make and dairy-free of course – suitable for vegans, as well! You’ll make the cashew milk itself at the same time as you blend all the other ingredients together, so you actually only need dry ingredients to prepare this lovely drink. And water, of course!

We’re finally getting some winter weather here as well, and being surrounded by snow has been great, after long and dark time that felt like endless fall! They say the snow will melt in couple of days again (sigh) but luckily we still have some days to enjoy it, while sipping this warm and lovely drink!

I came up with this recipe a while ago, when we ex tempore decided to go on a small trek into a National park just near to Helsinki. We packed quickly since it was quite late already and we wanted to get to the park before it was totally dark (with no success – it was really dark when we got there, haha), and we wanted to take some hot chocolate with us. We didn’t have any plant based milk at hand, so I decided to make some from cashews. When I put the nuts into the blender, I realised I could actually put all the ingredients into the blender at the same time, and voilà – we had creamy, lovely drink that we heated up quickly – perfect!

If you have more time you can of course soak the cashews up first, but it works without soaking them as well.

But now, let’s see the recipe itself – it’s so easy and nice!

Lovely Cashew Hot Chocolate with Cashew Cream 

for two

6 Tbsp cashew nuts
1 dl + about 2 dl water
3-4 fresh dates (pitted)
2-2,5 Tbsp raw cocoa powder
hint of ceylon cinnamon
hint of cardamom

on top:
cashew cream
raw chocolate (if desired)

1. Put the nuts into the blender first, with 1 dl of water. Blend until you have soft cashew cream. Take couple of spoonfuls of the cream for decoration, and add rest (about 2 dl) water into the cream. Blend silky “milk”.

2. Add all the other ingredients into the blender as well and mix smooth. Taste – add some dates if you want the chocolate to be sweeter. Pour into a kettle and heat up. Decorate with cashew cream and raw chocolate, and enjoy!

3. You can of course skip the cashew cream – then just add all the ingredients into the blender at the same time, and mix well.

Hey lovely, for the first time this year! Maybe you, as well, are in need of something super green, nutritious and refreshing? If so, scroll down, I promise this smoothie is what you’ve been looking for!

Our new year didn’t start as good as it could’ve, and yesterday we ended up spending nearly 2,5 hours in our car, the the middle of nowhere, as the engine stopped working for some reason. You might think that 2,5 hours is not that long, but I can tell you that it is, if the day is getting dark, the car is cold and you have a hungry two-year-old waiting with you, ha! While waiting for a rental car and looking food from our bags (thank god we had some crispy bread and ghee with us for her!) I started to dream about green smoothie (and wished I would never travel anywhere without heaps of nutritious snacks) and decided to make one as soon as we would get home.

But well, the whole travel ended up taking us nine (!) hours instead of three and a half, so it was late when we arrived home. The dreamy smoothie had to be postponed. But only for the night! And I can tell you it was worth all the wait.

Zesty Super Green Smoothie

This smoothie is filled with nutrients, vitamins, antioxidants, fiber and all the the stuff you can imagine. And in addition to all this, it’s also super delicious, zesty, refreshing and filling – so good! Great for lunch, snack, breakfast or when in stuck in your broken car, ha.

Zesty Super Green Smoothie

Zesty Super Green Smoothie 

for two

big handful of baby spinach
1 big avocado
2 big leaves of kale
about 5 cm piece of fresh pineapple, peeled and diced
handful of frozen mango
couple of Tbsp lemon juice
water, until the texture is perfect

Put all the ingredients into a blender, add some water and mix, and add a bit more water while mixing, until the texture is just right. Then, you’re all set – enjoy!

Dairyfree almond rainbow latte and feel good marmalade candies

Hey, lovely! The winter is slowly coming to Helsinki, but the snow is still missing. The darkness feels quite overwhelming at times: the sun rises around 8-9 and and sets after four, and every night our little girl goes to window and starts to wonder out loud how dark it really is – and she’s right: it’s really, really dark! While we keep on waiting for the snow to come I had to come up with something else that would cheer us up!

I’ve done co-operation with Lejos before, and last time I baked these cute rainbow sweet potato toasts using their almond milk. It seems that I’m almost addicted using more natural colors in my kitchen, and so I used them this time as well! As I mentioned, the situation over here required something cheery, and the result was simply lovely: warming, nutritious, delicious and bursting with colors!

May I present: Carrot cake latte and Red Velvet latte!

Most probably you’ve seen colorful lattes already popping up in Instagram and PInterest, and beetroot latte has been a thing for a while in many places and restaurants over the world. Spice turmeric latte (golden latte) starts to be old news already, but is still delicious and a real feel good drink as well. So, I can’t take credit for these really, and I’m thankful for the one who decided to add beetroot to the plant based milk in the first place: it’s lovely.

I saw the carrot juice powder at store one day, and instantly I saw the picture of carrot cake latte in my head – I simply had to try it! Carrot, as beetroot, has some natural sugars so it’s just sweet enough, but both of them has several health benefits, too! A perfect package, I’d say: just whip the almond milk and mix with beetroot or carrot juice “shot”, just like you’d be preparing cafe latte, and you’re good to go. So, so good!

Oh and there’s more! Because the Christmas is approaching as well, I prepared some feel good marmalede candies as well! I used NomNom – products, that are 100% fruits and berries, and covered them with high quality raw chocolate. Yum – so good, no need for other Christmas marmalede candies (that are popular over here): pure, real flavors of fruits and chocolate!

When you think about the Christmas (or any other kind) of candies, you might notice that the only natural thing about them is sugar. The most popular marmalede candies over here has only aromas and coloring, that will connect the taste they are representing. But not this time! These marmaledes are really made of strawberries, apple and raspberries, with some nutritious raw chocolate on top. Nothing more!

But let’s see the recipes then, shall we? Maybe you as well want to invite friends over for the most colorful latte cake – moment! They are so good in many ways: while sipping on these, you get the lovely taste and warming experience of pink or orange lattes, but as the same time you enjoy a lot of useful nutrients, that are always needed but especially during winter my body seems to crave more vitamins and antioxidants.

Carrot Cake Latte 

for one

about 0,5 dl water
1-2 Tbsp carrot juice powder (to taste)
0,5 tsp ceylonin cinnamon
hint of cardamom
about 2 dl plant based milk
(honey if needed)

1. Heat up the water and plant based milk in their own kettles or pans.
2. Mix the dry ingredients with the hot water.
3. Pour the hot plant based milk into a cup and foam it with a milk foamer.
4. Pour the “carrot juice shot” into the milk. (add honey if needed)

Red Velvet latte (beetroot latte)

for one

about 0,5 dl water
0,5-1 Tbsp beetroot juice powder (to taste)
hint of raw cacao powder
hint of real vanilla powder
about 2 dl plant based milk
(honey if needed)

1. Heat up the water and plant based milk in their own kettles or pans.
2. Mix the dry ingredients with the hot water.
3. Pour the hot plant based milk into a cup and foam it with a milk foamer.
4. Pour the “beetroot juice shot” into the milk. (add honey if needed)

Feel good Marmaledes

1-2 bags of NomNom-fruit snacks (or any other 100% fruit snacks)
raw chocolate
beetroot juice powder or any other juice powders for decoration

1. Melt the chocolate with low heat
2. Roll the NomNom fruit marmaledes in the melted chocolate, and put on on parchment sheet paper and to fridge for a moment.
3. When the chocolate marmalades are ready, decorate them with veggie powders.

Iced sesame milk cocoa with mint

If I had to name my favorite plant based milk, it would most probably be sesame seed milk. I love the taste, and with coconut milk is the only milk substitute that works perfectly with coffee too. The fact that sesame seeds are bursting with calsium is great news too, since we are, after all, talking about milk substitute. (By the way, this is why one should always use seeds with the hull.)

Sesame seed milk is really easy to make, but it takes some time, because the seeds should first be soaked over night. This is actually the reason I quite often forget to make the milk myself: the moment the milk is needed, I realise that the seeds haven’t been soaked. This is something I will for sure work on in the future, since not only is the sesame seed milk easy to prepare, it’s also incredibly nutritious, and at least from Finland not so easy to find from stores.

Dairyfree iced mint cocoa from sesame seed milk

This time I used to whole sesame seed milk to iced cacao, and it was just perfect with it! The cacao turned out super soft and silky. For the sweetness I added some dates and lucuma, along with a hint of peppermint extract – ending up with a sweet, refreshing, mint cocoa. And it was sooo good!

But besides being delicious and great alternative for milk, this iced dairy free cocoa has some great health benefits. Only adding nuts and seeds into your diet you makes a great difference, protecting you from various deceases and fighting inflammation. From this sesame seed cocoa, along with calsium, you also get fiber, a great amount of vitamin E and some good fat, to name a few. And yes, of course substituting cow’s milk with plant based milks you do a favor to the planet as well – this cocoa is also ethical and ecological choice as well!

Iced cocoa makes a great, refreshing drink for a hot summer day (and quiets you sweet tooth as well!).

Dairyfree iced mint cocoa from sesame seed milk

Iced sesame milk cocoa with mint
1 dl sesame seeds, soaked (hulled)
5-6 dl water
3-4 tbsp raw cocoa powder
1 tbsp lucuma powder
6 medjool-dates
n. 1/4 tl peppermint extract
ice cubes

1. Place the soaked sesame seeds into a blender together with water. Blend on high speed until the seeds are totally mixed with water and the “milk” is ready.

2. Take the seeds out of the soft dates, and add into blender together with lucuma, cocoa and peppermint. Blend, until nice and smooth.

3. Add the ice cubes and blend a bit more.
