Watermelon slush with lime and mint

Is there anything better than a cold, icy watermelon lime slush on a hot summer day? I doubt there is! If you agree, then keep on reading: here’s a lovely recipe to the cooling summer drink, with no added sugar like the normal slush drinks usually have.

This drink takes your thirst away, refreshes you, and gives you a great amount of C- and A-vitamins, fiber and potassium. Also, watermelon has this great antioxidant called lycopene, that, according to research, decreases the risk for cardiovascular diseases. Not bad at all from a summery drink, don’t you think?

this drink is quickly prepared, and it’s enough if the watermelon pieces are almost frozen: I diced the melon, left them in the freezer for about 20 minutes, and added some ice cubes as well. But if you have more time, go ahead and freeze the pieces properly and leave out ice cubes.

Watermelon has always been one of my favorite fruits, and I eat it tons during summer. This summer, even more than usually, I’m sure, thanks to this lovely drink!

Watermelon lime slush with fresh mint 

for two

1 mini watermelon (or half from a big one)
1 lime
handfull of strong, fresh mint
ice cubes

1. Cut the peel out from the melon and dice it. Put into freezer for 20 minutes or so.

2. Squeeze the juice of the lime and rinse the herb.

3. When the watermelon is almost frozen, take it out and add all the ingredients to blender.

4. Mix up this lovely, refreshing summery drink, and enjoy! ✨

Wonderfully Nutty Ice Latte (Dairy-free)

What could be more wonderful than a cold ice latte on a hot summer day? I enjoy different types of coffee drinks, and sometimes even crave for an ice latte, even though I try to keep my coffee intake in a minimum (sometimes I succeed, sometimes I don’t). When you can’t be sure that the ice coffees you order in cafés are naturally sweetened and dairy-free versions of your favourite coffee drink, it’s best to prepare it yourself. If you prepare it ready to go in a glass bottle, it’s easy to grab along and enjoy anywhere you like – in the park, on a picnic, on the go or even in the car! The ice melts, of course, quite quickly, depending a bit on the weather, soi f you want to enjoy the drink with ice, best drink it soon after leaving home.

This dairy-free nutty ice latte has been sweetened with dates and peanut butter. You can add some variation to the recipe by different choices of non-dairy milk – this time I decided to use rice milk, but a dollop of coconut milk would’ve worked just as well.

Nutty Ice Latte (Dairy-free)

1 portion of strong organic espresso
1,5–2 dl your choice of non-dairy milk (e.g. rice milk, oat milk, soy milk)
1 Tsp peanut butter
1 date

Add the peanut butter, date and your choice of non-dairy milk into the blender. Blend for a while. Add ice into a serving glass, and pour the sweetened non-dairy milk on top, add lastly the espresso.

And there you have your perfect ice latte for a hot summer day! On colder days you might even think of drinking this warm – just pour the milk out of the blender into a small pot, heat it up, leave out the ice and drink your non-dairy latte warm.

Very Berry Smoothie

This smoothie is not only really beautiful, it’s super good for you, too! The texture is thick and rich, and it contains heapfuls of fresh berries that you don’t have the luxury of using during winter: cherries and black berries. This smoothie was developed for Terranova, so you know it – the health benefit are maxed to the top. This time I used Terranova’s Cherry, Nettle and Turmeric Super Blend.

In addition to the vitamins and nutrients of fresh berries and chia seeds, this smoothie contains Montmore cherry, nettle, turmeric, ginger, and celery – all high-quality ingredients straight from nature picked into this food supplement to help repress inflammation, pain, and support our joints’ wellbeing. The product (and this smoothie) is especially good for people with joint problems, but it’s good for the rest of us as well!


Very Berry Cherry Smoothie

(two portions)

4 dl fresh cherries
2 dl fresh black berries
1 dl blue berries
3 Tbsp chia seeds
1 dl coconut milk
1 dl water
½ banana
½ Tsp liquorice powder
1 Tsp Terranova Cherry, Nettle & Turmeric Super Blend

1. Mix the chia seeds in the coconut milk and let them soak for about 10 minutes.

2. Pit the cherries by cutting them in half and removing the pit. Pour them in the blender with the black berries. Add the blueberries and the rest of the ingredients. Blend smooth.

3. Enjoy ✨
