Wonderfully Nutty Ice Latte (Dairy-free)

What could be more wonderful than a cold ice latte on a hot summer day? I enjoy different types of coffee drinks, and sometimes even crave for an ice latte, even though I try to keep my coffee intake in a minimum (sometimes I succeed, sometimes I don’t). When you can’t be sure that the ice coffees you order in cafés are naturally sweetened and dairy-free versions of your favourite coffee drink, it’s best to prepare it yourself. If you prepare it ready to go in a glass bottle, it’s easy to grab along and enjoy anywhere you like – in the park, on a picnic, on the go or even in the car! The ice melts, of course, quite quickly, depending a bit on the weather, soi f you want to enjoy the drink with ice, best drink it soon after leaving home.

This dairy-free nutty ice latte has been sweetened with dates and peanut butter. You can add some variation to the recipe by different choices of non-dairy milk – this time I decided to use rice milk, but a dollop of coconut milk would’ve worked just as well.

Nutty Ice Latte (Dairy-free)

1 portion of strong organic espresso
1,5–2 dl your choice of non-dairy milk (e.g. rice milk, oat milk, soy milk)
1 Tsp peanut butter
1 date
ice

Add the peanut butter, date and your choice of non-dairy milk into the blender. Blend for a while. Add ice into a serving glass, and pour the sweetened non-dairy milk on top, add lastly the espresso.

And there you have your perfect ice latte for a hot summer day! On colder days you might even think of drinking this warm – just pour the milk out of the blender into a small pot, heat it up, leave out the ice and drink your non-dairy latte warm.

’Keep it Cool’ Chocolate Pudding

The ’Keep it Cool’ chocolate pudding originates from the ’Laid back’ evening porridge that I couldn’t resist developing further. Rest and relax is something we all need once in a while, and in the midst of the busy months of spring it’s definitely worth thinking how one could support one’s own wellbeing with their diet. Relaxing toward the night is necessary for everyone, but in especially stressful life situations it’s good to give one’s nervous system some help in calming down and balancing itself even during the day, especially when one is feeling tense or overexcited.

And thus, I came up with the idea to use Terranova’s Oat and Cherry Super Blend even during day to calm my nerves and help find peace of mind. So, I’ve been using this product both in the evening to help me calm down before going to sleep and during stressful periods in life also during the day. This time I hid it inside this delicious chocolate pudding.

The ’Keep it Cool’ chocolate pudding is worth its name, helping to balance the nervous system with nutrients and vitamins essential for its wellbeing (e.g. vitamin B complexes). And, of course, this wouldn’t be a Wellberries recipe if this pudding would not be a treat for the taste buds as well: this chocolate pudding is both wonderfully chocolaty and comfortingly creamy.


’Keep it Cool’ Chocolate Pudding (for one)

1 banana
2 Tbsp chia seed
about 8 Tbsp coconut milk
1–2 Tbsp raw cacao powder
1 Tbsp lucuma powder
½ avocado
½ Tsp Terranova Oat & Cherry Super Blend powder
½ Tsp Ceylon cinnamon
a sprinkle of salt

1. Mash the banana into a mush in a bowl using a hand blender.

2. Add in the chia seeds and 6 Tbsp of coconut milk. Let the chia seeds soak in the mixture for about 10 minutes.

3. Add in the avocado, the raw cacao powder, lucuma, Oat & Cherry Super Blend, salt, and cinnamon. Mix it smooth with the hand blender, and decorate with coconut milk.


 

And there you have, yet again, that almost perfect package of nutrition and delight taken another step further.

Non-Dairy seed yogurt with lemon and mango

Those of you who follow Wellberries on IG probably noticed that during Easter I was trying to develop different types of dairy-free substitutes for yogurt. First I tested a 100 % sesame seed yogurt, which tasted divine (and the calsium content in it is super high – eating just a portion a day of sesame yogurt could almost cover your daily recommended intake of it!), but I found that in the end using only sesame seeds isn’t the optimal choice.

So, I continued my search for a best seed or nut (or mixture of them), and I didn’t have to think about the problem for long before I realized that the best result most probably would come out of the soft tasting hemp seed – and their omega 3/omega 6 ratio is great as well.  And what about the protein? I use hemp seed in almost every vegan meal or salad that I eat to add some protein to the portion – hemp seeds contain even 25 grams of protein per each 100 grams. In addition to all that goodness, hemp seed also include all the essential amino acids and some less essential ones too. They are definitely one of my favourite seeds, so I was eager to try to make “yogurt” out of them,

In the end I couldn’t resist the temptation of adding into the mix some sesame seeds, as well, to add some extra calcium – we are talking about a substitute for yogurt, after all. One portion of this non-dairy yogurt will provide you with approximately 110 mg of well absorbing calcium.

In summary, this soft-tasting yogurt has a slightly nutty taste to it and contains lots of healthy goodies like calcium, protein, healthy fatty acids, and loads of good energy. The only thing missing in this yogurt substitute that I can think of are the natural probiotics occuring in the dairy yogurts. Of course, if you want to add some probiotics into this yogurt, you could add a probiotic capsule into the mix as well.

I can guarantee you that this non-dairy seed-based yogurt will keep your hunger at bay for a good long while. It’s a great start to the day!

Hemp Seed-Based Yogurt with Lemon & Mango

(for two)

1 dl peeled hemp seeds (soaked)
0,2 dl light sesame seeds (soaked)
4–5 Tbsp water
1 mango
2–3 Tbsp lemon juice
a sprinkle of vanilla powder

1. Let the hemp and sesame seed soak in water over the night (this will make their structure softer, lead to a silkier yogurt texture and activate the nutrients in the seeds.)

2. Right before preparing the yogurt, rinse the seeds and drain the water.

3. Pour all the ingredients into the blender and let the blender do its magic until the texture is silky smooth. Taste and add lemon to your liking.

Tip: this non-dairy yogurt is even better cold, so I suggest having it rest in the fridge for a while before serving!

’Laid Back’ Evening Porridge

The ’Laid Back’ evening porridge is a near perfect evening meal. It calms, relaxes, and tastes soothingly soft. The mellow coconut, oat, and sweet blueberry taste separately wonderful, but together make a superb mix. The ’secret ingredient’ in this recipe brings a touch of balance to the nervous system, and it contains melatonin. This combined with the tryptophan oat meal porridge naturally contains the ’Laid Back’ evening porridge is perfect for calming down before bed time and helping us to fall asleep.

Let’s not keep the secret ingredient a secret any longer: I’ve hidden a dose of Terranova’s Oat & Cherry Super Blend powder in the blueberry chia seed jam! I love to pimp up foods, and this product deserved to be combined with something already soothing and calming.

The Terranova Oat & Cherry Super Blend contains green oat grains and cherry that naturally contains melatonin. Green oat, on the other hand, has traditionally been used to calm a restless mind, so the combination doesn’t sound all that bad, now does it? Luckily I no longer have troubles sleeping, but my mind does tend to make its rounds during the evening when I should rather be letting go of the day’s event and stop planning the coming day. With this porridge relaxing feels a bit easier no matter how busy a day I’ve had, and I fall asleep without problems.

Spring always seems to be a busy time, but luckily the sun boosts up our days with some extra energy, and by making sure we sleep well it’s easier to manage even the busiest days without stressing them over. We often have this porridge last thing in the evening, and I must say: I simply love this evening meal!


’Laid Back’ Evening Porridge

(for two)

2 dl gluten-free oat rolls
4 dl coconut milk
1 dl water
0,5 Tsp salt

Jam:
200 g thawed / fresh blueberries
2 Tbsp chia seeds
vanilla powder
1 Tsp Terranova Oat & Cherry Super Blend
a sprinkle of Ceylon cinnamon

1. Crush the blueberries with a fork and mix in the chia seeds and vanilla powder. Stir well and let the ingredients soak while cooking the porridge.

2. Mix the coconut milk, water and the rolled oats in a pot, add salt. Cook the porridge, stirring it once in a while, for about 15 minutes. When the porridge is ready, let it cool down for a moment.

3. Add one teaspoon of the Oat & Cherry Super Blend into the blueberry chia seed jam, and stir well.

4. Enjoy the warm porridge with the super healthy jam. If you feel like it, add a sprinkle of cinnamon on top!
